Terroir
High-raised vineyard, at heart of Roussillon, close to the village of Maury. The terroirs composed of black soils, schist from the Crétacé. This terroir gives the wine a great aromatic dimension. The parcels located between Maury and Vingrau are mostly located on black and red soils of compact limestone. They bring a nice freshness, a good crispy and certain length to the wine.

Elaboration
Hand harvested into crates of 10-12 kg each, so as not to bruise or damage the bunches and then handsorted at the winery. The crushed grapes are cold-macerated in their juice for a week before the fermentation begins to concentrate the aromas and the colour. After a slow fermentation at 25°c for 1 month, 10% of the cuvee is barrel aged to bring a subtle oak influence to the final blend.
