Les Onze Terrasses

Very dark colour. Pure, powerful and fresh nose with blackberry, incense, and pencil lead aromas. Large and mellow mouth feel with blackberry, cassis, dark pepper and graphite. The finish ends with contained acidity, that makes our taste buds drool over and goes on a iodic and gun stone taste. Ageing potential: 20 years.

Appellation: AOP Côtes du Roussillon Villages les Aspres.
Varieties: 65% Syrah, 25% Mourvèdre, 10% Grenache.
Yield: 12 hl/ha.
Average age of the vines: 40 years old.

Our red wine Les Onze Terrasses being a complex wine, wide, with red fruits, pepper and graphite notes, it will pair perfectly with exceptional dishes such as a boar stew, a rib steak, or a chicken with Morilles.

First selection of the eleven parcels with the best potential of quality on the Domaine. Schist Marble and Quartz soils. South/South-East exposure.

Elaboration

Green handpicked harvest in Spring to concentrate the grapes. hand picking. For this exceptional cuvee we decided to “bring the cellar into the vineyard” to respect the fruit, via the OVI (small mobile vat). Manually destemming to select only the “perfect“ berries to put into the 500L barrels. Manual pigeages. 25 months ageing into brand new barrels, that are then assembled through gravity work.
